Varmesan, my recipe for a vegan parmesan replacement to put on pasta, on salad, basically on everything you like, I have even used it on bread!
It’s whole foods plant based/vegan and it’s also soy free and gluten free. It is rich in multiple B vitamins, protein and fiber. And it does contain healthy whole foods fats from the nuts or seeds. And did you know that nutritional yeast consists out of almost 50% protein?! Awesome right? It can definitely be a nutritionally & energy dense topping for many different meals.
Ingredients:
- 1 cup or 50g nutritional yeast
- 1/2 cup or 75g cashews*
- 1 1/2 tbsp freeze dried onion or 1/2-1 tsp onion powder to taste
- 1 tsp of each dried oregano & basil
- 1 tsp cumin
- 1/2 tsp black pepper (freshly crushed)
- 1/4 tsp garlic powder
- 1/4 tsp salt
Directions:
Add everything to a (little) blender and grind finely. I use a grinder blade with a little cup blender for this. A electric coffee grinder may work as well, or just any other blender with a small container.
This recipe will store in the fridge for several months, although I don’t think anything will be left that long.
*You can replace the cashews with (roasted) sunflower seeds or almonds.
