With Easter around the corner and with the colorful spring feelings anyway, this smoothie is a fun recipe to try (maybe even together with kids). It’s not only colorful, it also tastes great! Of course you can also make each color apart into a smoothie on its own.
This recipe makes about 500 ml smoothie in total. If you want to make more of them to serve at a party or celebration or share with your loved ones, you can of course multiply the ingredients.
The Pink Smoothie
Ingredients:
- 50 g Strawberries (frozen/fresh)
- 50 g/ 1/2 ripe Banana
- 20 g Beetroot
- 30 g/1 tbsp. Coconut yoghurt
- Pinch Vanilla (Amazon link*) or some vanilla extract
- Optional: 1 tsp. Baobab (Amazon link*)
The Yellow Smoothie
Ingredients:
- 50 g Galia melon or other melon
- 50 g Pineapple
- 30 g Parsnip
- 30 g/1 tbsp. Coconut yoghurt
- Optional: 1/2 tsp. Baobab (Amazon link*)
The Green Smoothie
Ingredients:
- 100g/1 ripe Banana
- 30g Spinach
- A few Mint leaves
- 1/2 tbsp. Hemp seeds
- 30 g/1 tbsp. coconut yoghurt
- Optional: 1/4 tsp. Spirulina (Amazon link*)
Directions:
- Blend all the ingredients of each smoothie individually into the 3 smoothies. I recommend to use a small nutrition blender for this or maybe even use an emergency blender or just make a bigger batch.
- Try to go without using water if that works for your blender. The goal is to create a thick smoothie. If you have to use water, you can blend some ground psyllium husk (Amazon link*) in at the end and let it sit for a few minutes to thicken up.
- When ready you can start scooping your smoothie into a glass, using a spoon. I placed my glass inside a bowl at an angel. Carefully scoop in layer after layer each color. It works best with thicker layers and a thick smoothie. If the smoothies are to runny, they will blend together instead of laying on top of each other.
