This recipe takes only about 5 minutes to make and serves 1 person.
It’s whole foods plant based/vegan and it’s gluten free*, rich in fiber & energy. Also oats help to lower/optimize cholesterol levels in the body. Perfect for a long, busy day!
It’s really easy and quick and it will keep you full for long! Personally I almost always make my oatmeal this way because it’s super quick and easy. Especially in the winter I love to have some warming and comforting oatmeal. Also with an very active and busy day ahead, oatmeal is always one of my favorites because it keeps me full for a long time. And it’s healthy too! So here is one of my favorite quick varieties.
Ingredients:
- 75g or 3/4 cup oatmeal (more or less, depending on how hungry and active you are)
- 1,5 tbsp. ground flax seed.
- 1/2 tsp. Ceylon cinnamon (more or less to taste)
- A little bit of pure vanilla extract or ground bourbon vanilla (optional)
- 1 ripe banana
- 1 tbsp. peanut butter (from 100% pure peanuts)
- 200ml boiling water (more or less as needed)
Directions:
- Bring water to a boil. I use an electric kettle for this.
- Mash 1/2 of the banana with a fork in a bow.
- Add the oats, flax, cinnamon, vanilla and then pour the boiling water over it. Stir it together immediately, it will thicken fast, so add more water if it’s too thick. You will get a feeling for it when you make it a few times.
- Slice the other half of the banana on top and drizzle with peanut butter. Enjoy.
Note: If you like it more sweet, you can use some more banana or use dried fruit like raisins or dates cut into small pieces.
*If you have celiacs disease or are allergic to gluten it’s important to buy oats which are specifically labeled gluten free. Otherwise they could be ‘contaminated’ with gluten containing cereals that are packaged in the same factory.
