This recipe takes only about 20 minutes to make and serves 2 people
This is an really easy and quick recipe, packed with proteins and flavor. Perfect as lunch and dinner, also good for meal prepping.
Ingredients:
- 3/4 cup rice
- 1-2 tsp. mirin (flavored rice vinegar for sushi rice)
- 1 block of firm tofu, 200g
- 1/2 tbsp. soy sauce
- 1 lime
- black pepper to taste
- garlic powder or fresh crushed, to taste
- 1 tsp. roasted sesame oil
- 1,5 cup edamame
- a pinch of salt
- chili flakes or fresh chopped chilli
- 1 baby romain lettuche head
- 1/4 cucumber
- a few radishes
- 1 avocado
- 2 spring onions
- 1 mango
- sesame seeds
- 150g algae salad
Directions:
- Cook the rice according to the instructions on the packaging and flavour it at the end with the mirin.
- Cut the tofu into cubes and add to a container with a lid along with the soy sauce, lime juice of 1/2 lime, garlic, black pepper, 1/2 tsp sesame oil. Close the lid and shake it well to marinate the tofu, add to a pan and stir-fry on medium high heat for a few minutes.
- Add the edamame to another pan along with 1/2 tsp sesame oil, garlic, black pepper, chili flakes and a little salt and stir-fry also for a few minutes.
- Wash and cut the lettuce, cucumber, radishes and spring onions, and add to your serving bowls, except for the spring onions. Cut the avocado in halves, remove the pit, scoop the avocado out of it’s peel wit a spoon and slice it. Also peel and cut the mango in to cubes.
- To serve, add the rice, edamame, tofu, mango, algae salad all besides each other on top of the lettuce, cucumber and radishes. Top of with avocado, spring onions, sesame seeds, lime juice and eventually some more chili flakes. For dressing you could use a little mango blended with chili or a little drizzle of (sweet) soy sauce. But in my personal opinion, dressing is not really necessary because it are already many yummy flavors coming together.
