It takes about 10 minutes to prep and 40 minutes in total to make, and it serves 2 people.
This dish is of course plant-based/vegan, free of soy and gluten. And most of all, this dish is absolutely delicious and easy to make!
A beautiful seasonal side dish to pair with anything you like! We just had it besides a big and delicious salad with wild picked herbs and some additional smoked tofu hehe. 🙂
Ingredients:
- 400g Green asparagus
- 1 tbsp Olive oil
- 100ml/ juice with the fruit pulp of 1 orange
- Zest of 1/2 organic orange*
- 1 clove of garlic, crushed
- 1/2-1 tsp. black pepper, crushed
- A pinch of salt
- 1 twig rosemary, chopped finely
- 35g /1 handful of almonds
Directions:
- First preheat your oven to 200°C or 400°F. Then clean the asparagus and snap/break of the lower dry and woody part. Place the asparagus in a oven dish.
- For the marinade, dice the rosemary, crush/press the garlic using a garlic press or just dice it finely, zest and juice the orange and stir all the ingredients (except for the asparagus and almonds) together in a little cup or bowl.
- Pour the marinade over the asparagus and toss them around to coat them. Then put them into the preheated oven at 200°C or 400°F for 30 minutes.
- After the first 15 minutes, take the asparagus out of the oven, toss them up a bit again, using 2 forks or a pair of tongs to coat them again with the marinade. Then sprinkle on the almonds and put them back into the oven for the second 15 minutes and then they are ready. Enjoy!
*Tip for the orange zest: I always take the zest from when I have organic citrus fruits like lemon, lime and orange by just shaving/grating it off with a fine zest peeler/grater and store it in a little jar or container in the freezer. This way I have it always on hand when I need it and don’t have to use it at the moment I only want the fruit or juice.
