This recipe is enough for 1 portion/1 person and it takes only less than 10 minutes to make it!
It’s plant-based/vegan and mainly whole foods and it’s also soy free and gluten free (if using gluten free oats/muesli/granola).
It is definitely one of my all time favorite breakfast recipes! It is refreshing but filling at the same time & easy to make too! You can also take it with you as a lunch, but I would recommend putting the muesli in a separate little container and mix it in in with the rest when you are about to eat, otherwise the dry ingredients soak up the liquid from the yoghurt and make the whole dish more on the dry and thick side. But maybe that’s what you prefer, you do you! Now let’s get to the recipe!
Ingredients:
- 1 apple
- 1-2 hands full of blueberries
- 150-200 ml unsweetened soy yoghurt or soy cottage cheese
- 1/2 cup (home made) muesli/granola or just some rolled oats and a little hand full of nuts
- cinnamon to taste
Directions:
- Wash and cut up the apple into little pieces.
- Add everything to a bowl and stir together.
- If you like you can set some of the fruit and muesli aside and use it to top of your breakfast bowl with it, just because it looks nice.
Almost to easy to make a recipe for it right? But it’s a favorite of mine and I guess you will love it too! And who doesn’t love easy recipes? You can of course switch up the types of fruit you use for some variation! Enjoy!
