Thir recipe takes about 20 minutes to make and will be enough for about 6 burritos or wraps.
It’s a very easy and quick recipe, without any cooking. Perfectly for meal prepping and to take with you as a lunch. Of course it also makes a great dinner or even a breakfast, whatever you prefer. It is made with mainly whole foods, of course it’s plant-based/vegan and if you swap the tortilla wraps for gluten free ones it can also be made gluten free. So let’s dive right in to the recipe!
Ingredients:
For the kidney bean Cajun spread*:
- 1 can or 250g kidney beans
- 1/2 cup oatmeal
- 1 small onion
- 1-2 cloves garlic
- 2-3 tsp. Cajun spice mix, without salt*
- 1/2 tbsp. soy sauce
- 1,5 tbsp. tomato paste
For the tomato corn salsa:
- 2 tomatoes
- 1/2 cup of corn, fresh/frozen or canned
- 1 small onion
- 1/2 tsp. black pepper, crushed
- Juice of 1/2 lime
- 2 tbsp. chopped parsley, fresh or frozen
Other ingredients:
- Whole grain tortilla wraps
- Avocado or guacamole
- Cucumber
- Rocket or other greens
Directions:
- First of, we are going to make the kidney bean Cajun spread. For this, peel and clean the onion and garlic and chop them roughly. Add the beans into a food processor and add all the other ingredients on top. Blend until prefered consistency and scrape the sides down with a spatula a couple of times. You can prepare this spread already the day before.
- Than we make the salsa, also eventually already the day before. Chop the tomato, onion and herbs up finely and add everything to a bowl or jar and stir or shake together.
- And for the last part already we prepare our wraps or burritos either in the evening or morning before we leave the house to take them with us in a container or just prepare them as you are about to eat them. To do so, slice the avocado and cucumber, spread your wrap with the kidney bean Cajun spread and top with the other ingredients, tuck the ends and roll up as a burrito. Or if you want to make a triangle pocket, lay your tortilla wrap down, cut from one side to the middle, use a different filling on each quarter (like spread, salsa, avocado, greens and cucumber) and then fold over 1 quarter with the cut side and fold like that another 2 times so you end up with this quarter circle pocket. *Kidney bean Cajun spread: You can use this as a spread for in the wraps or use it like hummus or make bean burgers or bites out of it and bake them in the oven or fry them in a pan.
*I get my Cajun spice mix from a local spice shop where they mix it themselves, it’s a blend of pure spices without salt and any other unnecessary additives. If you buy a mix, check the ingredient list or ask those who mixed it for you to make sure it’s without salt. This way you can use as many of the spices as you like without using to much salt.
